Lighter Smoked Salmon & Egg puff pastry parcels! 🀀

I used half a serving of @tescofood 50% lighter pastry sheets for this recipe to lower the fat and calories. Here is how you make it! πŸ˜€

Cut the sheet accordingly and roll out slightly with a rolling pin. Fold over the edges and then bake for 8-10 minutes at 180 degrees until it starts to rise. Then remove from the oven, crack in your egg whites and bake for a further 8-10 minutes. Lastly, add in the yolks and bake for a remaining 5 minutes (this avoids over cooking the yolks - like I did in this picture πŸ˜³πŸ˜‚). Once puffed and crisp, remove from the oven and add some smoked salmon slices on top and voila πŸ’πŸΌβ€β™€οΈ

This would make a great weekend brunch to cook for friends or family but can also be prepared in advance! ❀️
